In the long run, switching meats up to provide variety every few months is OK but the Omega fatty acid content of some meats is better than others. Good question. Raw meat including the bone provides essential nutrients for your dog that dog food can never contain. The dog is a relative of the wolf and despite the physical changes in the dog which is a result of human selection I don’t believe a dog’s stomach is much different to that of a wolf.
